CIEH Level 2 Award in Healthier Foods and Special Diets

 

The course duration is one day and aims to provide candidates with a good basic understanding of nutrition to enable them to provide food that meets the requirements of a balanced diet.  It is suitable for anyone in catering, preparing and serving food, particularly those involved in the selection of menus, recipes and ingredients. This qualification is relevant to all catering establishments, but particularly important to sectors where there is a 'captive audience' (e.g. health care and education).

 

Those undertaking an NVQ in care, or wishing to pursue a career in working with children or the elderly will find the course invaluable.  It is also a very good general interest course.

 

The qualification provides an introduction to nutrition and focuses on six key areas:

  • The Balance of Good Health
  • The Relationship Between Diet and Health
  • Dietary Requirements of Different Groups
  • Catering for Different Groups
  • Effects of Food Processing
  • Labelling

The support materials focus on nutrition in catering and guide candidates in applying knowledge of nutrition to improve the quality of the food they prepare and serve.
