CIEH (Chartered Institute of Environmental Health) Level 3 Award in Supervising Food Safety in Catering The CIEH Level 3 Award in Supervising Food Safety in Catering aims to assist candidates in developing detailed knowledge and skills to equip them to supervise and train others in the field of food safety in catering. The qualification provides an introduction to supervising food safety in catering and focuses on six key areas:
The support materials focus on catering practice and guide candidates in applying knowledge of supervising food safety to ensure that hazards are controlled and good food hygiene standards are maintained and developed. Who needs this qualification? Food business operators, those responsible for the development and maintenance of HACCP – based food safety management procedures and/or supervising the work of others. Prerequisite It is highly recommended that candidates for this qualification have some knowledge and understanding of basic food hygiene – e.g. have completed a foundation certificate in food hygiene in the last three years. Course duration 18-hour training programme Assessment Assignment completed under exam conditions plus a 60-MCQ examination paper. Candidates who achieve the CIEH Level 3 Award in Food Safety Management Systems will gain credit towards the new CIEH Level 3 Award in Supervising Food Safety in Catering and need only attend two of the three parts of training and sit the examination and pass to achieve the full Level 3 Award.
